Vegan Apple Blender Pancakes

Ingredients

  • 1 1/2 cups almond milk
  • 1 1/2 tsp. coconut oil
  • 1 apple cored and quartered (peel on!)
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 2 tablespoons sugar
  • 1/2 tsp. cinnamon
  • 1/2 tsp. cloves
  • 1 tsp. vanilla extract
  • 1/2 cup whole wheat flour
  • 1/2 cup AP flour

Instructions

  1. Mix all of the ingredients together in the blender. Blend on "batter" setting. 

  2. Heat a lightly greased skillet over medium-high heat and cook pancakes until golden brown on each side.

  3. Serve with butter and maple syrup.
