When the leaves change color and I bask in that special, dusky light on the way home from an evening run, I get a crazy craving for pumpkin pie. So urgent, I can’t even grab a fork, much less defrost a pie crust! That’s where this recipe comes in handy. Pumpkin pie through a straw.
Since this recipe is pretty healthy to start, I like to crumble some graham crackers or gingersnaps on top… to balance it out a bit 😉
- 1/2 cup quick oats
- 1/2 cup water
- 1 cup fat free milk (vegans use almond milk)
- 1 cup ice
- 1/2 cup pumpkin puree
- 3 tbsp brown sugar
- 1-2 tsp cinammon
- pumpkin pie spice to taste
Cook oats and water in a small pot for about a minute or two, stirring often until it becomes thick and bubbly. Remove from heat and let it cool a few minutes.
In a blender add milk, pumpkin, sugar, cinnamon, pumpkin pie spice. Add oats and ice. Blend on high until very smooth.
Don’t be scared away by its bright, green color — this smoothie is super tasty, I promise.
Let me break it down for you:
apple + banana = super sweet and tasty
avocado = luciuos and creamy
green tea = a nice caffiene kick!
spinach + kale = an insane amount of vitamins and minerals
Even though I can’t taste the greens, I can definitely feel them. I always feel refreshed, recharged, and full of energy after drinking this smoothie. Add just enough water to blend and enjoy, that’s it! This smoothie gives me an amazing glow throughout the day! Try any combo you like, all you need is a base of bananas, fruit of your
choice and a couple handfuls of your favorite green! Even though I have written up one of my favorite recipes, feel free to customize it to your own tastes!
- 1 avocado, peeled, seeded
- 1 organic (sweet) apple , cored, leave peeling on the apple (extra fiber!)
- 1 frozen banana
- 1 cup baby spinach, loosely packed
- 1 cup kale loosely packed, stems removed
- 1 cup green tea, unsweetened (home brewed is best)
- 8 cubes ice
Add the above ingredients to a blender and blend until smooth. Add less green tea for a thicker smoothie.
