insanely easy nutella cookies


Would you believe me if I told you that you could make the fudgiest, butteriest, most delicious chocolate cookies on the planet without beating butter or chopping chocolate in less than 20 minutes?  Probably not. But hopefully by the end of this post, you will.

This morning, I had a cookie catastrophe.  Last night, I got home around 10 from a track meet.  I walked though the door and flopped into bed (I was still in my racing singlet).  I woke up around 11 this morning, and realized that I was meeting my friends Bella and Mimi for lunch at 12!  I threw on my leggings, and quickly slopped on some mascara.  Then I realized that there were no cookies. :0

I met Bella and Mimi at ballet school in seventh grade.  I have tons of great memories with them -- gossiping in the locker room, running to Starbucks before barre, and making fun of our ancient Russian instructor behind his back.  We used to play a game to see who could pay attention to him the longest (I always lost).  The three of us haven't been together in ages -- the last time I saw Mimi I was an 8th grader!  This was a really important occasion, and really important occasions call for really good cookies. 

Sadly, I didn't have time to whip together my famous compost cookies and I couldn't even pick up a box of Oreos for my Oreo stuffed chocolate chip cookies!

Thank god for Nutella.

Thanks to that magical, chocolaty spread, these cookies came together in a matter of seconds -- no butter left? Used all those chocolate chips? No problem! I didn't even need to touch my Kitchen Aid.  By the time I finished doing my hair, they were already cooled and ready to eat!

When I came home from lunch, my mom had eaten one of the extra cookies that I left on the counter.  She said that they were out-of-this-world delicious, and one of the best cookies I've ever made. 

Everyone should know this recipe -- because you never know when the next cookie catastrophe will strike!

 Ingredients
1 cup Nutella
2 tablespoons sugar
1 egg
1/2 cup flour + 1 tablespoon
coarse sea salt for sprinkling


Preheat oven to 350 degrees F.
Combine all ingredients except for the sea salt in a large bowl until well combined. Place dough in freezer for 10 minutes.
After 10 minutes roll dough into 1-inch balls, place on a parchment lined baking sheet and bake for 8-10 minutes. Remove from oven and let cool for a few minutes until cookies are set, then very carefully transfer to a wire rack. Generously sprinkle with sea salt.

    1. I'm sure they will have a blast making them-- plus since it uses an entire jar of Nutella, there's plenty of spoon-licking involved (shhh don't tell!). Hope they like them!

  2. Erica, these are truly simple cookies. Sometimes it is nice just to cut to the chase and get something in and out of the oven so we can dive into goodness quickly. I am going to pin this to a Pinterest board I have dedicated to my daughter who is away at college. She loves Nutella and I'm sure she will be whipping up a batch of these immediately.

  3. Yum! I've done a peanut butter version of this before - it's amazing! I want to try cookie butter too. Yours looks amazing though. Definitely trying the Nutella version soon!

    I recently met up with one of my best friends from 1st grade-8th grade, she just moved to NYC and we have SO much fun together! I hope you had a great time with your old friends :D

  5. So I'm back. Just made these. So heavenly! I melted chocolate chips and swirled them around on top too...absolutely delicious. Everyone loved them!! I also tried the cookie butter version, it's definitely good but needs some tweaking to make it softer. Still amazing though! Thanks.

  7. If I don't have parchment paper, should I use aluminum foil or can I place right on the baking sheet? And would you recommend spraying with non-stick oil? Also- do these taste ok without the salt? Thanks!

    1. I would strongly recommend buying parchment paper, as these are very sticky cookies. You could use foil and spray it with PAM, but I would not recommend it. They would taste delicious without salt, however, I love the salty sweet combination, and think that sea salt really adds to the "wow" factor of these cookies. Good luck!

    We just made these for a late night snack. Let's just say my mom doesn't eat sweets..at all. But she LOVED THESE. Especially the salt on top.

recipe showdown: belgian waffles

It's humiliating.  It's tragic.  It's the decay of Western civilization.

Ever since I heard that little, blond, 4-foot-tall toddler's famous catchphrase"a dollar makes me holler honey boo boo," I've been in love.
She's hyperactive, uninhibited, and foul-mouthed... and I'm kind of obsessed.


But since this is technically a food blog, I should be talking about food, not the "Here Comes Honey Boo Boo."  I did a little research and the Honey Boo Boo clan has some *pretty* interesting dishes.
Have you ever heard of "Sketti"?
Spaghetti, doused with a sauce that is one part margarine, one part ketchup.
However, the most infamous Honey Boo Boo specialty is her "go go juice" -- a secret mix of Mountain Dew and Red Bull that gets her "go go"-ing for her pageants.  If you aren't familiar with "go go juice," click here.  Thank me later.

This is a sinfully decadent, sinfully easy dessert with a sinfully rewarding response.

It's not the daintiest, nor the prettiest. As a matter of fact, it's basically a hot mess in a pan.
But you know what? Despite it's frightening appearance, people just can't keep their hands off of it.
I made this for the first time for my school's Winter Sports Banquet.  In the morning, I put it in the fridge, all wrapped up in foil with a big sign saying DO NOT EAT...


When I came back to get it for the banquet, some sneaky little devil had eaten half the pan.  I wonder who it was...
Was it the P.E. teacher, trying to get his chocolate fix before he had to teach another period of freshman Health?
Was it the librarian, trying to drown her sorrows due to the fact that no one checks out anything but textbooks anymore?
Was it that "innocent" little freshman boy from Baking club?
I'll never know...
