pumpkin pie smoothie

When the leaves change color and I bask in that special, dusky light on the way home from an evening run, I get a crazy craving for pumpkin pie. So urgent, I can't even grab a fork, much less defrost a pie crust! That's where this recipe comes in handy. Pumpkin pie through a straw.

Since this recipe is pretty healthy to start, I like to crumble some graham crackers or gingersnaps on top... to balance it out a bit ;)

With love,
Erica
 Serves 4
Ingredients
  • 1/2 cup quick oats
  • 1/2 cup water
  • 1 cup fat free milk (vegans use almond milk)
  • 1 cup ice
  • 1/2 cup pumpkin puree
  • 3 tbsp brown sugar
  • 1-2 tsp cinammon
  • pumpkin pie spice to taste
Cook oats and water in a small pot for about a minute or two, stirring often until it becomes thick and bubbly. Remove from heat and let it cool a few minutes.

In a blender add milk, pumpkin, sugar, cinnamon, pumpkin pie spice. Add oats and ice. Blend on high until very smooth.

    4. Haha that sounds like a great sick day!

Okay so I made this pumpkin smoothie the other day, and I was not a big fan at first sip, though my roommate and friend loved it--said it tasted like rice pudding. But I LOVED the refrigerated portion I ate/drank the next night...it tasted like a pumpkin pie slushy (my fridge is wonky and partially freezes things in certain parts)!

Question: normally when I make oats, I think the recipe directs that you use like 1/2 cup oats to 1 cup of water. Do you usually make oats with that ratio of oats/water or did you use an especially low ratio for this recipe? I was lazy and tried microwaving my oats instead, and they were still rather watery by the end. I guess it must just depend on the thickness of the smoothie that you want?

    5. I always make my oats the same way that you do, however, for this recipe, I like to make them a bit thicker so I usually use equal parts water and oats.

I always think smoothies taste better out of the fridge. For some reason, my blender generates a lot of heat, and there is nothing refreshing about a warm smoothie! YUCK!

    6. Totally agreed about warm smoothies. Okay not sure if I missed something in the recipe, but wouldn't equal parts oats/water be 1/2 cup oats to 1/2 cup water (instead of 2 cups)? Just want to make sure I/future makers get maximum perfection out of this smoothie :)

    7. Yes! You are so right! I will fix that in the recipe!

  2. My roommate who just moved out bought me a smoothie book for the blender she left in my possession--lucky for me, because I can't wait to try this! It'd be cute for an autumn party to pair it with apple crisp and pecan pie smoothie.
